Vinegar Onions

If you like eating raw onions along with your main courses then you must surely try this....



Ingredients

  • Vinegar
  • Sliced onions
  • Sliced carrots (optional)
  • Green chilies - slit
  • Salt

Method:


In a bowl add all the above ingredients and mix well.
Keep it aside for 20- 30 mins before serving.

The quantity of vinegar should be enough to soak the onions well.

Can be served with biryani, parathas, veg or non veg dishes...etc

Egg Gravy



Ingredients

  • Eggs - 3
  • Potato - 1 big size
  • Onion - 2 med size
  • Tomato - 2 med size
  • Green chilies - 2
  • Turmeric pwrd
  • Red chili pwdr
  • Salt
  • Garam masala
  • Coriander (Dhanya) pwdr
  • Curry leaves
  • Coriander chopped
  • Oil


Method


  1. Boil eggs and potato together.
  2. In a pan heat oil and fry onions until slightly golden brown , now add tomatoes, garam masala pwdr, turmeric pwdr, red chili pwdr, salt, coriander (dhanya) pwdr, green chilies and fry this for 10 - 15 mins on medium to low flame
  3. Turn off the stove and allow the mixture to cool down and mixie it.
  4. In a separate vessel heat 5 - 6 tbsp of oil, add curry leaves , potato and mash the potato while stirring it - fry it until the color of the potato changes slightly.
  5. Add the paste and mix it well and cook this for 5 mins, add water according to the consistency of the gravy u want
  6. Chop boiled eggs in bigger chunks and add it to the gravy along with chopped coriander and mix well, cook this for another 5 mins on low flame and its ready....


Roti paratha rice pulav poori...etc

French Toast

The perfect breakfast for weekend and also a great snack while hungry :)




Ingredients

  • White bread - 5 - 6 slices
  • Eggs - 2
  • Milk - half cup
  • Vanilla essence - 2 drops
  • Sugar - 3 -4 tsp
  • Oil - 4tbsp

Method

  1. In a  bowl add milk, sugar, eggs, vanilla essence and whisk it until smooth and fluffy.
  2. Soak each slice of bread for 10 - 20 secs in the egg mixture and pan fry them until golden brown.  
Note: Soaking the bread in the egg mixture for more than 30 seconds will make soggy and difficult to pan fry.

Tomato Chutney - version 2

Here it is tomato chutney but a different version...LOL This is the second tomato chutney recipe which i am uploading.... honestly couldn't think of another name... if you guys have something in mind ..kindly suggest :)


Ingredients

  • Farm tomatoes - 6-7 - finely chopped
  • Onions - 2 med size - sliced
  • Garlic pods crushed - 4- 5
  • Green chilies slit  - 2
  • Cumin pwdr - 1 tsp
  • Coriander / Dhanya pwdr - half tsp
  • Red chili pwdr - 1 tsp
  • Whole black pepper - 1 tsp
  • Curry leaves
  • Coriander chopped
  • Mustard seeds - half tsp
  • Salt
  • Oil - 4 - 5 tbsp

Method

  1. In a thick bottom pan heat oil, add mustard seeds, garlic pods and curry leaves, once it splutters add whole black pepper and green chilies,  now add onions and let the onions cook for 10 mins on medium flame.
  2. Once the onions are nicely done add tomatoes and rest of the ingredients, cover the pan and cook this for 10 - 15 mins on low flame. Tomato chutney is readddyyy :)
Note: Tastes yummy with Khichdi, Roti, Veg biryani...etc

Fresh Strawberry Milkshake

Yummy and chilled milk shake to beat the heat in summer.... 




As the name says it all ... in a blender add fresh strawberries, milk, sugar and few ice cubes and blend it... take it out in a serving glass and add a tbsp of chopped strawberries to it ...your milk shake is ready....

Note: You can even add a scoop of vanilla or strawberry ice cream to the milk shake while blending it :)

Clear Chicken Soup

Healthy Clear Chicken Soup.... made this for the first time, very simple to make and it tasted very good, got the recipe from my my bhabhi (Rushi Sumiya). 
Its a healthy soup, suitable for all age groups :D



Ingredients


  • Chicken Pieces - 5 -6
  • Onions - 1 big size - finely chopped
  • Coriander
  • Salt to taste
  • Balck pepper pwdr - half tsp
  • Water - 1 1/2 glass

Method


  1. In a vessel add chicken pieces, water, onions, salt and cook this for 15 mins on medium flame.
  2. Add chopped coriander and cook until the chicken is soft and tender.
  3. Strain the soup in a soup bowl, add black pepper pwdr and few shredded chicken pieces and serve hot.

Palak Paratha

Ingredients:


For Paratha:

  • Palak (spinach) - finely chopped - 1 bunch
  • Wheat flour - 3 cups
  • Boiled Potatoes - 4 - 5
  • Onions - 1 big - Very finely chopped
  • Green chili - finely chopped
  • Water
  • Salt
  • Oil
  • Ghee

For Curd Dip:

  • Curd - 1 cup
  • Cumin (zeera) powder - 1 1/2 tsp
  • Salt

Preparation


  1. Wash palak and finely chop it.
  2. For the dough : In a bowl add wheat flour, salt, palak and give it a good mix. Now add water accordingly to make a soft dough, in the end apply some oil to the dough, cover it up and keep aside.
  3. For the filling: Take a mixing bowl add boiled potatoes and mash them nicely, now add green chilies, coriander, onions and mix well.  ( Mash boiled potatoes while they are hot, so that it will be smooth.
  4. For the curd dip : Beat curd in a small bowl using a fork or a whisk. Add cumin (zeera) pwdr and salt to it and mix well, curd dip is ready.

Method

  1. Make small portions of the dough and  the filling separately.
  2. Take one portion of the dough and roll it into a small circle.
  3. Place one portion of the filling in the center of the dough circle, bring together all sides of the dough to the center and seal tightly.
  4. Roll out again into a bigger circle, with the help of a little flour.
  5. Cook the paratha on a hot tava (Griddle), apply some ghee on both sides of the paratha and cook until golden brown.
  6. Repeat with the remaining dough and filling to make more parathas.
  7. Serve hot with curd dip or pickle.
