Ingredients:
For Paratha:
- Palak (spinach) - finely chopped - 1 bunch
- Wheat flour - 3 cups
- Boiled Potatoes - 4 - 5
- Onions - 1 big - Very finely chopped
- Green chili - finely chopped
- Water
- Salt
- Oil
- Ghee
For Curd Dip:
- Curd - 1 cup
- Cumin (zeera) powder - 1 1/2 tsp
- Salt
Preparation
- Wash palak and finely chop it.
- For the dough : In a bowl add wheat flour, salt, palak and give it a good mix. Now add water accordingly to make a soft dough, in the end apply some oil to the dough, cover it up and keep aside.
- For the filling: Take a mixing bowl add boiled potatoes and mash them nicely, now add green chilies, coriander, onions and mix well. ( Mash boiled potatoes while they are hot, so that it will be smooth.
- For the curd dip : Beat curd in a small bowl using a fork or a whisk. Add cumin (zeera) pwdr and salt to it and mix well, curd dip is ready.
Method
- Make small portions of the dough and the filling separately.
- Take one portion of the dough and roll it into a small circle.
- Place one portion of the filling in the center of the dough circle, bring together all sides of the dough to the center and seal tightly.
- Roll out again into a bigger circle, with the help of a little flour.
- Cook the paratha on a hot tava (Griddle), apply some ghee on both sides of the paratha and cook until golden brown.
- Repeat with the remaining dough and filling to make more parathas.
- Serve hot with curd dip or pickle.
