Badam ka Meetha - बादाम का मीट्ठा




Ingredients:


  • Almonds / Badam 250 gms 
  • Khova - 250 gms
  • Sugar - 300 gms
  • Safrron strands (soaked in milk)
  • Bengal Gram whole / Chana dal - 150 gms
  • Milk - 2 - 3 cups
  • Raisins - 100 gms
  • Whole cardamon, cinnamon and cloves - 1 -2 each
  • Ghee - 4 -5 tbsp


Method:

  1. Soak badam for minimum 2 hrs . Keep aside 3 - 4 tbsp of blanched and sliced almonds for tadka.
  2. Cook chana dal in cooker with enough water for 150 gms of dal (do not add lot of water)
  3. Grind badam and khova with milk in mixie, keep aside and next in the mixer add chana dal(cooked) and one cardamom with milk and grind. (do not add water and the mixture should be of pouring consistency)
  4. Take out the above mixtures in a wide thick bottom vessel, add sugar and saffron strands, mix well and cook it for approx 20 to 30 mins on low flame, keep stirring constantly.
  5. For tadka, heat ghee in a small pan add whole cardamon, cinnamon,cloves, raisins and sliced almonds and add it to the above. 

Badam ka meetha is ready to serve, tastes good even when served cold :D

HoT HoT Bajjis



Ingredients


  • Gram flour / Besan - 2 cups
  • Rice flour - 2 heaping tbsp
  • Onions / Potatoes - 2 big 
  • Red chili pwdr - 1 tsp
  • Ginger & garlic paste - half tsp
  • Baking powder- a quater tsp
  • Turmeric pwdr  - half tsp
  • Pepper pwdr - half tsp
  • Salt
  • Oil for frying


Method


  1. Mix all the above ingredients in a bowl (except onion / potatoes and oil).
  2. Add enough water to make a thick batter. Cut onions / potatoes in to thin slices.
  3. Heat oil in a wok. Dip onion / potato slices in the batter and deep fry them in oil on medium to low flame until golden brown.
Enjoy hot bajjis with tomato ketchup.

Chilli Chicken - MoMs Style




STEP 1 :

Ingredients for marination:


  • Chicken - 1 Kilo (boneless small pieces preferably)
  • Cornflour - 2 tsp
  • Egg - 2 
  • Black pepper pwdr - half tsp
  • Ajinomoto - 1 tsp
  • Red chili sauce - 2 tbsp
  • Red food color - quarter tsp 
  • Salt


Marinate chicken with all the above ingredients.

In a wok, heat oil and fry the marinated chicken until golden brown on medium flame.


STEP 2 :


Ingredients:



  • Capsicum 
  • Spring Onions 
  • Cabbage 
  • Whole black pepper
  • Soya sauce - 2 tsp
  • Vinegar - 2 tsps
  • Dry red chili whole
  • Cumin seeds
  • Chopped green chilies
  • Chopped ginger and garlic
  • Curry leaves


Method:


  1. In a wok add oil, add whole black pepper, curry leaves, dry red chili, finely chopped green chilies, cumin seeds, capsicum, cabbage,spring onions, chopped ginger and garlic, fry for 2 mins, now add soya sauce, vinegar, ajinomoto, salt, half cup of water and cook this for 2 mins and now add the fried chicken and allow it to cook on low flame until the water dries up.
  2. In the mean while mix 3 tsp of cornflour with half cup of water and add it in the above chicken, mix well cover it up and cook on low flame for 5 mins.
MoMs style chilli chicken is ready to relish... :)

Kheema Bread Roll



Ingredients:


  • Sandwich bread slices - 8 - 10
  • Meat mince / Kheema - half kilo
  • Onions finely chopped - 2 big size
  • Peas
  • Potato
  • Capsicum 
  • Ginger garlic paste - 2 tsp
  • Red chili pwdr - 1 tsp
  • Turmeric pwdr - half tsp
  • Chat masala - 1 tsp
  • Salt
  • Oil for frying


For the stuffing:
  1. In a cooker, add kheema, turmeric pwdr,salt, peas, potato and ginger garlic paste with half cup of water , cook this for 2 - 3 whistles. 
  2. Open the cooker, add rest of the ingredients and cook this on high flame for 5 mins and take it out in a plate.


For the roll:
  1. Cut the sides of the bread, in a bowl take some water, dip a bread slice and take it out, keep it in between your palms and press to take out the excess water, now add 2 tbsp of the kheema stuffing and seal the bread by pressing it with your hands. 
  2. Heat oil in a wok and deep fry it until golden brown. Serve with ketchup or any dip.

Bread ka Meetha

Bread ka Meetha or Double ka meetha or Bread pudding...there are many names and ways in which this dish is prepared, here's presenting my mom's version of delicious bread ka meetha. Hope you guys enjoy it as much as i do :)




Ingredients:


  • Bread slices - 10 - 12
  • Sugar syrup 
  • Khova - 150 gms
  • Ghee - 2 - 3 tbsps
  • Almonds sliced
  • Raisins
  • Whole cardamon and cloves - 1-2 each
  • Cinnamon stick - 1 inch
  • Oil for frying



Method:


  1. Cut the bread slices in any shape you like, i cut them in to triangles.
  2. Heat oil in a wok and fry the bread slices until golden brown.
  3. Make sugar syrup from 500 gms of sugar with 2 big glasses of water.
  4. In a separate vessel heat ghee and add cardamon, cinnamon, cloves, almonds, raisins, now add the sugar syrup, after it starts boiling, add khova, once the khova comes to a boil turn off the stove and place the bread slices carefully in it one by one and cover the lid and keep it in lower flame for 2 - 3 mins.
  5. Garnish it with silver warq (optional) and dry fruits and serve. Tastes good even cold :)


Note: The consistency of the sugar syrup and bread slices should be as shown in the above picture.
